A Closer Look: Filey Bay Porter Cask #2 Special Release
Our distillery ethos is ‘respecting tradition but doing things our own way’ and that’s never more true than this release!
Introducing Filey Bay Porter Cask #2. It’s a release that celebrates our farm, brewery and distillery. Whisky aged in Porter casks is quite unusual but for us it’s something that makes total sense. Our sister company, Wold Top Brewery produce award winning Marmalade Porter, and it’s these casks we use to mature this whisky, but we don’t stop there. Once we take the whisky out of the cask we put beer back in and it comes out as barrel-aged beer. See the cask life cycle diagram below that shows you the exact process.

Long and fruitful beer maturation.
This is the longest beer maturation we have ever produced and, we believe, one of the longest in the wider whisky industry.
This whisky has been matured for 4 years in first-fill ex-bourbon and then further 2 years and 10 months in the ex-porter casks, which were also originally ex-bourbon but had matured our whisky/Flagship prior to the beer.
Compared to our original Porter Cask Special Release expect a bolder, maltier dram that carries a deeper marmalade punch, full bodied and complex. You will find flavours of chocolate cereal and roasted malt on the nose, opening up to a rich, dark marmalade finish.
