Tasting Notes
A Maturation Milestone.
Our second Porter Cask release represents a significant maturation milestone, showcasing our brewing, distilling and farming expertise. While our inaugural 2024 release explored the influence of Wold Top Brewery’s Marmalade Porter over an eight-month finish, Filey Bay Porter Cask #2 has matured in these specific casks for nearly three years.
Bolder, maltier, and carrying a deeper marmalade punch, it’s a complex, full-bodied dram. Expect chocolate cereal and roasted malt on the nose, opening up to a rich, dark marmalade finish.
Long and fruitful beer maturation.
This is the longest beer maturation we have ever produced and, we believe, one of the longest in the wider whisky industry.
This whisky has been matured for 4 years in first-fill ex-bourbon and then further 2 years and 10 months in the ex-porter casks, which were also originally ex-bourbon but had matured our whisky/Flagship prior to the beer. The beer from these casks was used to create the barrel-aged beer Rip Curl.
