This week, we had the pleasure of hosting the team from Pairings Wine Bar at our distillery.
Pairings Wine Bar, on Castlegate in York, is the vision of sisters Kate and Kelly Latham. Their dream was to create a space they themselves would love to visit, and they did just that. With a menu of fine wines, local ales, cocktails, and amazing coffee, paired with an array of cheeses, charcuterie, deli delights, and delectable desserts, Pairings offers an inclusive experience that has something for everyone.
It was a day filled with exploration and, of course, a generous pour of knowledge and insight into our field-to-bottle production, regenerative farming techniques, and a guide through our whisky and beer-making processes.
